Yule time!



We have now lived in our new apartment for about three weeks. It's exciting, strange, weird, fun, chaotic, messy and absolutely wonderful. All at the same time.

Yesterday my mom decorated some gigant gingerbread figures she's made. Really neat. <3




I got one piggy to hang up, so I hung it in the kitchen.=)

Lots of mail!

Weee, I got lots of mail in my "inbox" right now, and one long one (7 A4 pages!) on the way to my good pal in Slovenia. =)

I love to have all the good letters all together like that, it makes me want to write and write and write. Which I actually have been doing to day, LOL!

I will answer Sophie, Jacqueline, Marga, Jeanette, Alessandra, Rebecca and Carol over the coming weeks. Autumn is creaping up so it's an even greater time to be indoors writing letter while listening to music and such.

Today we had a minute of total silense at work, to honour the victims in the awful attacks.




We also light candles, one for every victim...

Summer?


Not so much...

We had some thunder storms again last night, kept me awake for an hour or so. =S Blah. Wish for sun and warm summerlike weather. Miss those cousy summer days.

In another week it is time for summer vacation and I am sooo looking forward to some time off. Just for myself, together with Frode. Hope we will have a fantastic time even though both our plans had to be changed.

At first we were supposed to go to Femund National Park, but then came the year of True Lemmings which have led to hare plague in the waters and streams. It is unsafe to drink the water so then we decided to have a car trip vacation and camp by streams and lakes by the road, so we could buy food and water along the way.

Now a flood warning has been broadcasted in that area, actually in the whole eastern part of Norway. So our THIRD pland is to stay in the mountain cabin and relax there. Maybe go to Røros and Trondheim like last time we were there.

A good vacation I hope for no matter the weather. =)

Lamb albondigas fajitas

Succulent meatballs and tasty peppers wrapped up in a warm tortilla served with salsa and sour cream.




Ingredients
1 x Old El Paso Roasted Tomato & Pepper Fajita Kit
500g lean minced lamb
125ml sour cream
1 x red pepper, deseeded and cut into small chunks
1 x yellow or orange pepper, deseeded and cut into small chunks
1 x shredded lettuce
A bunch of spring onions, finely chopped
A small handful of chopped mint
A small handful of chopped coriander
A pinch of cayenne pepper
8 x skewers

Kit contains: 8 x Old El Paso Soft Salsa Tortillas, 1 x Old El Paso Roasted Tomato & Pepper Fajita Spice Mix, 1 x Old El Paso Roasted Tomato & Pepper Salsa

Instructions

1. Chuck the mince, spring onions, mint, coriander and the Old El Paso Roasted Tomato & Pepper Fajita Spice Mix in a large bowl. Mix together well and then shape into 40 small meatballs (rough size).

2. Thread the meatballs and peppers onto skewers, then grill or barbecue for 3-4 minutes each side until thoroughly cooked through. Remove from the skewers.

3. Meanwhile, mix together the sour cream with the mint and cayenne pepper, to taste.

4. Warm the Old El Paso Soft Salsa Tortillas, following the instructions on the pack, or cook on the barbecue or in a griddle pan for 20-30 seconds each side.

Make it your way

Grab some warm Old El Paso Soft Salsa Tortillas and throw on some lettuce, peppers and 5 meatballs on each. Finally spoon over the Old El Paso Roasted Tomato & Pepper Salsa and sour cream. Roll up into fajitas and get stuck in!

Funny story, really.



Today I finally went to the store to buy ink catridges for my ink pen, which I haven't used for some years now. First I looked in the shelf for them where they keep all their pens and equipment , but couldn't find any.



So I had to ask this young man, not a day over 20, if they had any. He thought for a while then said he might have seen some in the back. He looked a little stressed out honestly and looked inside a cupboard for a minute.

When he came back up he asked if I could wait a minute so he could ask the girl he worked with, and she told him loud and clear that they were in the cupboard behind the desk. So he went back there to look some more. He started to get really red the poor fella.



(my first ink pen. It's about 18 years old)

It was then I understood that silly old me had thought he would know what I was looking for, but he'd no clue what an ink catridge for a pen looked like!!! After I described it as a narrow bullet like thingie with blunt tip and see through plastic, he found it immediatly.

Funny story on a Monday, LOL.

No puppy yet...

I so wish I had my little puppy to play with! It's a pitty I can't get one now since I have time and love for a little one, but hopefully things start going my way with the loan and everything.

I sent 3 applies to different counties so I should get some answers next week already. Cross your fingers for me, and enjoy this cute video while we wait. =)

Easter in pics Part I

Big moose was here! LOL!
The river is open now, but a couple of days ago it was packed with ice.

Erithacus rubecula or Red Robin as most people know it by.
Motacilla alba out hunting insects.
The shy Turdus merula came and paid us a visit this morning. Also known as the Blackbird. It sings really beautifully.
I actually don't know what this is, I need to look it up in a bird book.
A beautiful Pyrrhula pyrrhula was here with his female. This is pretty much a winter bird for me, but here they appear when spring comes.
The river is really low since they empty it in the spring, just before the flooding starts. I can see the river bed and all the rocks, it was really a special sight.


A stone church in Torsby - Sweden. I really am fascinated by churches so we had to stop and have a look at this one.


Easter isn't over so I will post more pictures when I can. =) Internet isn't that easy in the mountains where we are going tomorrow, so I won't promis anything before I'm back home.
